Upside Down Orange Polenta Cake

With spring right around the corner, this upside down orange polenta cake is the perfect welcome. You can use any oranges you like but I used cara cara oranges for their beautiful deep color and unique taste. Layered over a delicate and light polenta cake, it’s the perfect pairing.

Ingredients

Orange Layer

2 -3 oranges peeled and sliced thinly

1/4 cup sugar

1/4 cup butter

Cake Layer

1 cup flour

1 cup polenta or cornmeal

2 tsp baking powder

2 egg yolks

1 stick butter

1/2 cup of sugar

1 tbsp orange zest

1 packet of vanillina

1 cup of milk

Directions

Preheat the oven to 350 F

Butter a 9-inch springform pan, cut a piece of parchment paper and line the bottom of the pan and butter it

Peel your oranges and slice them thinly

Melt 1/4 cup of butter and pour it into the bottom of the springform pan, pour in 1/4 cup of sugar and spread evenly on the bottom

Layer your thinly sliced oranges on the bottom of the pan so they are overlapping and put the pan to the side

In a bowl, combine flour, polenta/cornmeal, vanillina and baking powder. Set it to the side

In another large bowl, add the two egg yolks, sugar and mix until well combined

Next, add the melted butter and orange zest and mix

Alternate between adding a little bit of the dry ingredients and a little milk, mixing and repeat process until everything is combined

Pour it into your springform pan and spread evenly

Put the pan on a cookie sheet before baking so if it leaks it won’t dirty your oven! (I know from experience!)

Bake for 30-35 minutes or until a toothpick comes out clean

Allow to cool for 10 minutes before taking it out of the pan
