Tuscan White Bean Soup

If I’m being honest my favorite thing to do in the winter is make two or three big pots of soup and eat them all week. After a long day at work and a commute home, there’s nothing better than walking in the door and heating up some homemade soup. Not only does this soup warm you right up but it’s filling and healthy. Perfect for after the holidays when you need to detox for all the struffoli and panettone!

Ingredients:

3 carrots peeled and diced

3 stalks of celery diced

2 gloves of garlic

2 bay leaves

2 cups spinach

1 cup farro

1 cup vegetable stock

2 15 oz cans of cannellini beans

Directions:

Add oil, garlic, bay leaves, carrots and celery to a big pot

Sweat the vegetable out for 6-8 minutes on medium heat

Add farro and cannellini beans to the pot

Add vegetable stock and spinach

Fill the pot the rest of the way with water and add salt to taste

Cook for 35-40 minutes on medium heat
