Stuffed Zucchini Flowers

For Italians, the zucchini flower is a highly coveted delicacy that comes but once a year. You’ve probably seen a bunch of stuffed zucchini flower recipes but this rendition with mortadella and mozzarella is sure to be a game changer.

Yield: 16 flowers

Ingredients

1/4 pound of thinly sliced mortadella

1/2 a mozzarella cut into cubes

1 cup all purpose flour

2 eggs beaten

salt and pepper to taste

olive oil for frying

Directions

Clean your zucchini flower gently and take the pistol out from the center

Add a cube of mozzarella and thinly sliced piece of mortadella inside of the flower

Beat two eggs in a bowl

Put flour in a shallow dish and add salt and pepper

Dip your flour into the egg and then lightly dredge it in the flour

Add your flowers to the hot frying pan with oil and fry on each side for 2-3 minutes

Place on a paper towel to catch the excess oil and serve immediately
