Chocolate Chunk Amarena Cherry Cookies

I’ve eaten plenty of cookies of all different flavors and shapes, but this has got to be one of the best…if not the best. They’re soft, have chocolate and just when you least expect it you get the bursting flavor of amarena cherry. You might want to double or even triple this recipe because I promise you no one will be able to eat just one!

Yields: 9 large cookies or 12 small cookies

Ingredients

2 sticks of butter at room temperature

3/4 cups brown sugar

1/2 cup white sugar

2 eggs

1 packet paneangeli vanillina or 1 tsp vanilla extract

2 cups all purpose flour

1 tsp baking soda

3/4 tsp salt

2 cups semi-sweet chocolate chips

1/2 cup chopped amarena cherries

Directions

Preheat the oven to 350 F

Using a hand mixer or stand mixer, beat the butter and both sugars until fluffy. Add the eggs and vanilla and continue to beat until well combined

Next, sift your flour, baking soda and salt into another bowl

Mix in the wet ingredients in to the dry ingredients until combined and then fold in the chocolate chips and cherry bits

Using an ice cream scoop or your hands, scoop cookies onto a parchment paper lined cookie sheet

Bake for 12 - 15 minutes
