Lemon Parmigiano Orzo with Chicken
I like to use my stove as little as possible in the summer and since you can whip this up in under 30 minutes, it’s perfect for those scorching hot summer days. Not to mention, it’s packed full of flavor and fresh summer ingredients.
Ingredients
1 pound of orzo pasta
2 pounds of chicken breast or chicken tenders
juice from 1/2 lemon
1 cup white wine
2 tablespoons fresh chopped basil
2 gloves of garlic
1/2 onion diced
4 tablespoons olive oil
1/4 cup grated parmigiano
Salt, pepper and garlic powder to taste
Directions
Bring a pot of water to a boil and cook your orzo according to package instructions
Add your chicken to a bowl and coat with salt, pepper and garlic powder
While the pasta is cooking put your chicken to cook in a pan with some oil. If you are making it with pre-cut chicken tenders cook for 4-5 minutes on each side. If cooking chicken breast, fillet it in half and cut into 1-inch strips and cook for 4-5 minutes on each side
Drain your pasta and add it to a bowl and toss with some olive oil and parmigiano
When the chicken is fully cooked remove it from the pan and place it on a dish on the side
Add garlic, onion, wine and lemon juice to the pan and allow it to simmer for a couple of minutes. Cook until the garlic begins to brown and the onion becomes translucent
Cut your chicken into bite sized pieces and mix it in with the orzo
Add the juice from the pant to the chicken and orzo and toss
Garnish with fresh chopped basil and some more parmigiano
