Strawberries with Balsamic and Whipped Cream

What do you do when you go strawberry picking and pick six pounds of strawberries? You make one of my favorite quick and easy desserts! Ok, so maybe you didn’t go strawberry picking but you can still make this delicious recipe. You may be skeptical of using balsamic vinegar on your strawberries, but I promise it’s a match made in heaven!

Yield: serves 3

Ingredients

2 cups of sliced strawberries

1 1/2 tablespoons of sugar

splash of balsamic vinegar

whipped cream

Directions

Slice two cups of strawberries in a bowl and then add the sugar and balsamic vinegar. Mix to toss everything together and coat the strawberries.

Spoon the strawberries into ice cream cups and top with whipped cream. I think homemade whipped cream can’t be beat so here’s my recipe for it: half pint heavy cream, 1/4 cup powdered sugar, splash of vanilla extract. Mix in a stand or hand mixer until it forms stiff peaks.
