Italian Sponge Cake

This Italian spongecake recipe is the perfect dessert in a pinch. It’s a great recipe to keep in your back pocket and you most likely have everything you need on hand to make it!

Ingredients

200g flour

150g sugar

6 eggs

zest of 1 lemon

2 packets of paneangeli vanillina or 1 teaspoon vanilla extract

Direction

Start by whisking together the eggs and sugar in a bowl until fluffy. Next, add the flour, vanillina and lemon zest and mix until everything is combined.

Pour into a loaf pan, 4x4 pan or bundt pan (note: this will be a smaller bundt cake) and bake at 350F for 30-35 minutes or until golden brown and a toothpick comes out clean when poked through the center.

Let cool, dust with powdered sugar and enjoy!
