Grilled Eggplant

I love grilling season because it’s such an easy way to cook and doesn’t make a mess in the kitchen! One of my absolute favorite things to grill is vegetables, especially eggplant. I love to grill a bunch, marinate them and keep them in the fridge all week to pick on. The longer they marinate, the better they taste!

Ingredients

2 Sicilian eggplant sliced thin

2 cloves of garlic sliced thin

2 tablespoons of chopped parsley

1/3 cup extra virgin olive oil

splash of white wine or red wine vinegar

salt to taste

red pepper optional

Direction

Using a mandolin slicer or knife, slice your eggplant thin. Grill them for 1-2 minutes on each side until tender and have grill marks.

Put them in a large bowl and add garlic, parsley, salt, olive oil, vinegar and toss to coat well. Put them in the refrigerator to marinate a minimum of one hour but the longer the better!
