Sausage and Ciabatta Bread Stuffing

If I’m being one hundred percent honest, my favorite part of Thanksgiving has always been the sides. This sausage and ciabatta bread stuffing is my absolute favorite and an absolute showstopper. Stuffing can sometimes get overlooked in the grand scheme of all of the Thanksgiving cooking but you will be so glad you took the time to make some of this delicious homemade stuffing.

Yield: 6-8 people

Ingredients

1 loaf of ciabatta bread cut into 1 inch cubes

1 pound of sweet fennel sausage, ground

2 carrots chopped

1 small yellow onion chopped

2 stalks of celery chopped

2-3 cups chicken stock

2 tablespoons chopped parsley

2 tablespoons chopped fresh rosemary

1/3 cup of olive oil + 2 tablespoons

salt and pepper to taste

Directions

Preheat your oven to 375 F

In a skillet, add 1 tablespoon of olive oil and your ground sausage. Cook until the sausage has browned and then put it in a large bowl

Add another tablespoon of olive oil to the skillet with your chopped celery, carrots and onion. Cook until fork tender and then add to the bowl with the sausage

Next, cut your ciabatta bread into 1 inch cubes

Add your ciabatta bread, chicken stock, oil, rosemary, parsley, salt and pepper to the bowl with the sausage and vegetables

Toss everything together until combined

Add it to a 9”x13” baking dish and bake for 30-35 minutes or until golden brown
