Butternut Squash Ravioli with Hazelnut Basil Sauce

These homemade butternut squash ravioli in a hazelnut basil sauce are sure to impress anyone! They are definitely a labor of love but when you bite into them and taste all of these amazing flavors come together, it will so be worth it!

Yield: 1 pound of ravioli

Ingredients

For roasting squash:

1 tablespoon oil

salt and pepper to taste

For pasta:

2 cups 00 flour

3 eggs

1 teaspoon of salt

For filling:

1 roasted butternut squash, skin off and chopped

1/2 cup grated parmigiano

1 onion diced and sautéed

1 tablespoon brown sugar

pinch of nutmeg

salt and pepper to taste

Hazelnut Basil Sauce:

1/2 cup of basil chopped

1/2 cup of hazelnuts chopped

3 tablespoons butter

2 tablespoon oil

1/4 cup grated parmigiano

salt and pepper to taste
