Roast Chicken with Apples and Potatoes
I know you’ve probably made a lot of roast chicken recipes but I promise this rendition with apples and potatoes will be your new favorite. This delicious roast chicken is surround by a bed of crispy potatoes and sweet apple slices. It’s the perfect fall meal and what makes it even better is you can use this recipe for your Thanksgiving turkey!
Ingredients
1 whole chicken
6 potatoes
2 apples
2 tablespoon fresh rosemary, plus 3 sprigs for inside the chicken
4 cloves of garlic
Pinch of nutmeg
Salt and pepper to taste
Directions
Preheat the oven to 450 F
Let your chicken soak in a bowl of water and salt for 20 minutes
While your chicken is soaking, wash and peel your potatoes. Slice them into wedges
Cut your apples in half and slice them thinly
In a bowl, add your apples and potatoes. Season them with salt, pepper, rosemary, two garlic cloves sliced thinly and nutmeg
Drain your chicken and put it in a roasting pan
Take two handfuls of the potato and apple mixture and stuff it inside the chicken with 3 sprigs of fresh rosemary and 2 cloves of garlic
Place the rest of the apples and potatoes around the chicken in the roasting pan
Take more oil, salt, pepper, nutmeg and rosemary and season the outside of the chicken
Cook for about one hour to an hour and a half or until the chicken has an internal temperature of 165 F
