Salmon with Lemon and Fennel

During the week I’m all about a quick dinner but that doesn’t mean I want to skimp on flavor! I want quick and delicious. This baked wild salmon is just what the doctor ordered. The key here is using wild salmon because it really does have a flavor difference from farm raised salmon and it’s so much better for you!

Ingredients

1 piece of salmon (mine was just over a pound)

1 lemon

a handful of fronds from fennel

salt, pepper and garlic powder to taste

Directions

Preheat your oven to 350 F and line a baking sheet with parchment papper

Place your salmon on the baking sheet and sprinkle salt and pepper on top

Next break up the fennel fronds with your hands and sprinkle them over the top of the salmon

Next squeeze juice from half a lemon over the top

Thinly slice the other half of the lemon and line it on top of the salmon

Sprinkle garlic powder on top

Bake for 20-25 minutes
