Tortellini Soup

This quick and easy tortellini soup is the perfect week night dinner for a cold winter day. It requires few ingredients and minimal effort, but I’m willing to bet it will be your new favorite winter comfort food dish!

Ingredients

2 carrots, peeled and diced

2 stalks of celery, diced

1/2 onion, diced

2 tbsp olive oil

salt and red pepper to taste

28oz can of whole peeled tomatoes

2 cups water

1lb fresh tortellini

1 cup spinach or green of your choice

Directions

Coat a large pot or dutch oven with olive oil and then add your carrots, celery, onion, salt and pepper

Allow it to sauté for 8-10 minutes

In the meantime, add your whole peeled tomatoes to a blender or food processor and pulse until liquified

Add the tomato sauce to your pot and then add 2 cups of water

Allow this to cook on medium-low flame for 25-30 minutes

Bring your soup to a rolling boil and then add your tortellini

Cook for the amount of time on the package instructions

Turn the flame off and then add your spinach and mix until it wilts

Serve immediately
