Fennel and Blood Orange Salad
Fennel is one of my all time favorite things to eat. I love it raw, roasted and as a salad. I love making this fennel and blood orange salad in the winter to take advantage of citrus season!
Ingredients
1 bulb of fennel
1 blood orange
salt and pepper to taste
3 tbsp extra virgin olive oil
shaved parmigiano for garnish
Directions
Clean and cut your fennel, see this video for how to clean fennel
Peel and slice your blood orange and then but it into bite size pieces
Add the fennel and orange to a bowl and sprinkle salt and pepper over top
Add your extra virgin olive oil
Garnish the top with shaved parmigiano and toss together
