Penne Vodka

Penne vodka is one of my guilty pleasure dishes. I didn’t grow up eating it because cream in sauce was a BIG no in my house, so I was sure to order it whenever we went out to dinner. A girls gotta do what a girls gotta do! This recipe is so creamy and delicious with bits of crispy pancetta…need I say more?!

Ingredients

1lb penne

1 28oz can of whole peeled tomatoes

1 small onion, diced

2 tbsp extra virgin olive oil

4 oz pancetta, cubed

1/2 cup vodka

1 cup heavy cream

salt and red pepper flakes to taste

optional: peas

Directions

Put a large pot of salted water on to boil

In another pot or dutch oven, add your chopped onions, pancetta and red pepper flakes (If you’re using frozen peas add them in now). Cook for 5-6 minutes

Next add your vodka and allow it to cook down by half

Add your can of whole peeled tomatoes and use a potato masher to crush them into a sauce

Salt the sauce to your taste and allow it to cook for 35-40 minutes on low flame

When it’s ready, add the cream and turn the flame to medium high

Throw your pasta in the pot of boiling water and cook according to package instructions

Drain the pasta and add it to your sauce
