Meatballs in Sauce

I absolutely love meatballs cooked in sauce. Don’t get me wrong, I do also love a fried meatball but to keep things a bit healthier, this version where the meatballs cook low and slow in your red sauce cannot be beat! This recipe will definitely feed a crowd so cut the ingredients by half if you want a smaller amount, but I never heard anyone complain about leftover meatballs!

Ingredients

Sauce:

2 28oz cans whole peeled tomatoes

2 cloves garlic, crushed

a few leaves of fresh basil

salt to taste

Meatballs:

2.5 pounds ground beef, veal, and pork mix

2 large eggs

1/3 cup chopped parsley

1/2 cup grated parmigiano

1 cup plain bread crumbs

2-3 cloves of garlic, minced

salt and pepper to taste

Directions

In a large bowl, add your meat, eggs, parsley, parmigiano, bread crumbs, garlic, salt and pepper

Using your hands combined the mixture well and roll into meatballs about the size of a golf ball

In a big pot, add oil and garlic and cook for 2-3 minutes

Next, add your meatballs into the pot and allow them to brown on one side before flipping to brown on the other

Blend your two cans of sauce in a blender or food processor and pour into the pot

Add the fresh basil and salt

Cook low for 35-40 minutes

Serve with your favorite pasta or eat with some bread
