Peach Cobbler

Is there anything better than a ripe and juicy peach in the summer?! I don’t know about you but I look forward to summer fruit all year and I love using them in different recipes. This peach cobbler is a MUST summer dessert and yes, the side of gelato is mandatory!

Ingredients 

5-6 peaches sliced thin

Juice of a lemon

1 tbsp sugar

 Crumble top:

1 cup flour

¼ cup butter cut in cubes

¼  teaspoon cinnamon

Pinch of nutmeg

Pinch of salt

¼ cup sugar

¼ teaspoon baking soda

½ teaspoon vanilla extract

Instructions

Grease an 8x8 baking dish and line two layers of the sliced peaches. Pour the lemon juice over top and then sprinkle with the sugar

In a bowl, mix the flour, butter, cinnamon, nutmeg, salt, sugar, baking soda and vanilla. Mix it with your hands until it forms a crumble texture 

Break the crumble up over top the peaches, make sure you cover the whole top

Bake at 400F for 30-35 minutes (until the top is golden brown and the peaches are bubbling)

Serve with some gelato!
