Fregola and Clams

Fregola is a Sardinian pasta that is very similar to couscous. I love making it with clams because you can scoop the fregola up with the clam shells and broth for a delicious bite!

Ingredients

1lb fregola

3 tbsp olive oil

3 cloves of garlic, sliced thin

1 teaspoon calabrian chili pepper

1/2 cup white wine

1/2 cup parsley, chopped

2 lb vongole

Directions

Bring a pot of salted water to a boil and cook your fregola according to package instructions

While the fregola is cooking, in a large pot, add oil, garlic and the calabrian chili pepper. Let it cook a few minutes until the garlic browns a bit

Add your white wine and allow is to simmer for about 3-4 minutes

Next, add your vongole and cover

Let cook on medium/high heat until your vongole have opened

Before draining your fregola, reserve some of the starchy water

Once you drain the fregola, add it to the pot of opened vongole and toss everything together. If it looks to dry as this point, you can add some of your reserved water

Add your chopped parlsey and a drizzle of extra virigin olive oil to the top

Serve immediately!
