Parmigiano Roasted Tomatoes

Tomato season is upon us! I love using tomatoes in everything I possibly can while they’re in season and our garden is full of them. This simple roasted tomato recipe is so easy to make and it’s the perfect summer side dish!

Ingredients

8 vine tomatoes cut in half

1/3 cup grated parmigiano

2 tablespoons fresh oregano

1/4 cup extra virgin olive oil

salt to taste

Directions

Preheat the oven to 450F

Wash your tomatoes, cut them in half and place them on a baking sheet

Sprinkle them with salt and then add the chopped oregano and grated pamigiano

Drizzle them with extra virgin olive oil and bake for about 15 minutes
