Garlic Scape Pesto

Garlic scapes are long tender stems that grow out of the top of a hard-neck garlic plant. If you happen to be growing your own hard-neck garlic, this is an amazing way to use the scapes! If you aren’t growing garlic, you can probably find a bunch of scapes at your local farmers market. Their mild garlic taste gives the perfect flavor and beautiful green color to this pesto.

Ingredients

2 cups garlic scaped, chopped

1/3 cup almonds

1/4 cup grated parmigano

juice from half a lemon

1/3 cup extra virgin olive oil

salt and pepper to taste

Directions

Add your scapes, almonds, parmigiano, lemon juice, oil, salt and pepper to a food processor and blend until creamy and smooth.

You can use the pesto on pasta, meat, fish or just slather it on some toasted bread!
