Kalamata Olive and Tomato Pasta Salad

This pasta salad is one of my favorite things to make in the spring and summer. Not only is it so easy but the longer it marinates the better it tastes. I love making a big bowl and keeping it in the fridge to pick on throughout the week.

Ingredients:

1 pound of farfalle pasta

4 tomatoes on the vine chopped

2 cups of calamata olives pitted and cut in half

1/2 cup evoo

1/4 balsamic vinegar

salt to taste

1/4 fresh basil chopped

Directions:

Boil a pot of water and cook pasta according to package instructions.

Cut up all of your ingredients and mix in a bowl.

Add the pasta and balsamic, oil, salt, evoo and basil.

Cover with saran wrap and let marinate in the fridge for 2-3 hours or overnight.
