Stuffed Peppers
If you’re looking for something healthy and delicious, you’ve come to the right place. This dish is perfect for a quick weeknight dinner but definitely doesn’t skimp on flavor. You can get creative and swap out the ground turkey for chicken, beef or sausage!
Ingredients
6 peppers (you can use yellow, red or orange)
1 pound ground turkey
1 cup chicken stock
1 cup risotto
2 cups peas
2 cups tomato sauce
2 gloves of garlic
3 tablespoons evoo
1 tablespoon rosemary
2 cups grated parmigiano
salt and pepper to taste
Directions:
Preheat the oven to 400 F.
Cut your peppers in half and take out the seeds.
Drizzle with a little olive oil and bake for 20 minutes.
In a sauce pan, cook oil, garlic and rosemary until it begins to brown.
Add ground turkey, peas and risotto. Stir until turkey begins to brown a bit.
Add tomato sauce, chicken stock, salt and pepper.
Cook on medium heat for 20-25 minutes.
Take the peppers out of the oven and fill them with the mixture.
Grate parmigiano cheese on top and return to the oven for an additional 20-30 minutes.
