Garlic and Lemon Scallops with Linguine

If you need a dinner that is both delicious and can be thrown together in twenty minutes, I’ve got you covered. I have to admit, I don’t make scallops often and after making this I’m kicking myself for not using them more! The flavors of white wine, garlic, lemon and fresh parsley all marinate together for such a flavorful dish.

Ingredients

1 pound of linguine

1 pound of scallops

2 cloves of garlic sliced thin

2 shallots diced

1/2 cup chopped fresh parsley

1 cup white wine

2 tablespoons olive oil

1 tablespoon butter (optional but will give your scallops a nice brown coating)

salt and red pepper to taste

Directions

Bring a pot of water to a boil and cook your pasta according to package instructions

Wait until you throw your pasta in to cook your scallops

In a pan or skillet heat oil and butter until it’s sizzling

Toss your scallops in salt and all them to the skillet

Cook on each side for 3 minutes

Remove them from the skillet and put them in a dish covered with foil so they stay warm

In the same skillet add your white wine, red pepper, shallots and garlic

Cook on medium high heat for 5-6 minutes

Drain your pasta and add it to the mixture in the skillet to coat

Pour it into a serving bowl and top with scallops and fresh parsley
