Fresh Tomato Sauce

I’m all for a can of whole peeled San Marzano tomatoes, they’re my go to in the colder months for making tomato sauce, but as soon as the warm weather hits, fresh tomato sauce is the only way to go. Trust me, once you try this super easy and delicious fresh cherry tomato sauce, you’ll never look back.

Ingredients

500g paccheri or rigatoni giganti

900g cherry tomatoes

2 tablespoons evoo

2 cloves of garlic, crushed

1 teaspoon peperoncino

30g grated parmigiano

30g grated percorino or grana padano

fresh basil for garnishing
