Ground Chicken Pesto Skillet
As the warmer weather approaches, I’m all about quick, easy and light meals but I’m not willing to skimp on flavor. This delicious ground chicken pesto skillet has all the flavors of spring: fresh cherry tomatoes, thinly sliced zucchini and flavorful pesto. You can use ground turkey, ground chicken, ground beef…whatever suites your fancy. You can eat this on it own or add some couscous!
Ingredients
2 lb ground chicken
3 zucchini cut in half and sliced thinly
1 pint of cherry tomatoes cut in half
1 medium onion chopped
1 cup of pesto, I have a recipe for my pesto here
1 tbsp olive oil
salt to taste
parmigiano for garnish, optional
Directions
In a skillet, add oil and onion and sauté until onions are translucent
Add your ground chicken and cook on medium heat for 7-8 minutes until it browns. Mix it to break it down into small pieces
Add zucchini and tomatoes and cook until they tomatoes release their juice and the zucchini are tender about 20-25 minutes
Turn the flame off and take the skillet off of the burner. Mix in your pesto, garnish with extra parmigiano and serve
