Pistachio Pesto

If you love pistachios then this pesto is right up your alley. It’s so quick to make and goes great on pasta, chicken, fish, crusty bread…really anything!

Ingredients

4 cups fresh basil

1/2 cup shelled pistachios

1/2 cup grated parmigiano

2 cloves of garlic

1 teaspoon Calabrese peperoncino

Juice from half a lemon

1/2 cup olive oil (more if you don’t want it as thick)

salt to taste

Directions

Put all of your ingredients into a food processor or blender and blend until you have a nice creamy pesto!
