Asparagus and Eggs

Asparagus and eggs is one of my favorite cucina povera dishes. It’s simple, quick to make and the taste is out of this world. Make sure you have some nice crusty Italian bread on hand to make a delicious sandwich!

Ingredients

2 bunches of asparagus

2 cloves of garlic crushes

2 tablespoon extra virgin olive oil

2 eggs whisked

salt to taste

Directions

Wash your asparagus and break off the hard part at the bottom. You’ll feel where the asparagus naturally breaks off when you bend it

Discard the hard part at the bottom and then break the rest of the asparagus into about three pieces

In a pan heat oil and garlic and then add the asparagus in

Add salt and cover the asparagus and cook until tender

When the asparagus are tender pour the two whisked eggs over top and mix well until all the asparagus is coated in the egg

Turn the heat off and cover and let cook for an addition 3 minutes

Uncover and serve!
