Meat Sauce

I love a good meat sauce with some fresh pappardelle and a little grated parmigiano to top it all off. It’s a classic Sunday dinner that will certainly not disappoint even the pickiest of eaters!

Ingredients

1 28oz can of whole peeled tomatoes or passata

1 pound pappardelle

2 tbsp extra virgin olive oil

2 cloves of garlic crushed

1 teaspoon dried or fresh rosemary

1 pound ground meat (I use a mix of veal, pork and beef)

1/2 cup red wine

salt to taste

a handful of fresh basil

Direction

In a large pot or dutch oven, add olive oil, garlic and rosemary

Sauté for 7-8 minutes

Next, add your ground meat mix, break it up with a potato masher or wooden spoon and cook until brown

Add the red white and cook on high heat until the wine reduces by about half

Next, add the tomato sauce and the fresh basil

Cook on low heat for about an hour. The longer it cooks the more flavorful it will be!

Put a large pot of water on to boil and cook your pasta according to package instructions

Drain the pasta and mix it in with the sauce

Top with some grated parmigiano and enjoy!
