Zucchini Pie
This zucchini pie recipe holds a special place in my heart because it’s my husband’s grandma’s recipe. Every time I make it, I think of her and laugh about how adamant she was that bisquick had to be used in this recipe. Once when my husband and I were still dating and she was making the pie and there was no bisquick in the house, so my husband had to go out and buy a box so she could make it just right!
Ingredients
3 cups zucchini sliced thin
1/2 of a white onion
4 large eggs
1 cup bisquick (or 00 flour)
1/2 cup grated parmigiano
1/2 cup extra virgin olive oil
1 tablespoon chopped fresh basil
salt and black pepper to taste
Directions
Preheat the oven to 350F
Add all of the ingredients to a food processor blender until you have a batter consistency
Pour into a buttered pie dish and bake for 35-40 minutes or until golden brown
