Tiramisu Truffles

These tiramisu truffles have all the flavor of a regular tiramisu with much less work. These are the perfect dessert to bring to a holiday get-together or even to package up and gift to friends and family. My favorite way to enjoy them is with a nice hot espresso!

Ingredients

250g mascarpone

80g espresso

60g powdered sugar

160g lady fingers

unsweetened cocoa powder for rolling the truffles

Directions

Yield: 10-15 truffles

Make your espresso and let it cool to room temperature

Leave your mascarpone out while your espresso cools so it is easier to mix

Add your mascarpone, espresso and powdered sugar to a bowl. Whisk it until you have a nice smooth and creamy texture

Next, add you lady fingers to the food processor and pulse until they turn into a powdery consistency

Add the ladyfingers to the cream mixture and combine

With your hands, take about a tablespoon of the mixture and roll it into a ball

Roll the ball into the cocoa powder

Once you’ve finished all of the truffles, place them in the freezer for half hour and then transfer to the refrigerator to keep them firm

These will keep in the refrigerator for a couple of days
