Spinach Artichoke Quiche
I love making a delicious quiche because it’s prefect for pretty much any occasion. You can eat it for breakfast, brunch, lunch, dinner and everything in between! This spinach artichoke quiche is super easy to make and will be a crowd favorite.
Ingredients
Pie Crust
1 cup flour
8 tbsp butter, cold and cut into cubes
pinch of salt
3 tbsp ice cold water
Quiche Filling
1 shallot diced
12 oz bag of frozen artichokes
2 cups fresh spinach
1 brie cheese round
salt and pepper to taste
6 eggs
1 1/2 cups milk
pinch of nutmeg
Directions
Put your flour and salt in a food processor and pulse to combine. Next, add in the cubed butter and pulse until it resembles cornmeal. Add you 3 tbsp ice cold water and pulse until the dough comes together
Wrap the dough in plastic wrap and refrigerate for 30 min - 1hour
In a medium sized pot, add the diced shallots and extra virgin olive oil and sautee until translucent
Next, add in your bag of frozen artichokes and cook for 10-15 minutes on medium heat. Add your fresh spinach and cover for 5 minutes or until wilted
Put the mixture to the side and allow to cook
Butter a 9 inch baking dish and roll your dough out
Place the dough into the baking dish and press into the pan removing any excess dough from the edges
Add your spinach artichoke mixuture to the pie dish and top with bite sized pieces of brie cheese
In a bowl, whisk together the egg, almond milk, and nutmet
Pour the egg mixture into the baking dish
Bake at 375F for 35-40 minutes
Allow to cool completely before serving
