Arugula and Prosciutto Pasta Salad

There’s really nothing better in the summer than a delicious pasta salad. I love to make mine early in the day so it has time to marinate and dinner is done and waiting for you at the end of the day! The best is making a big batch so you have it to pick on throughout the week, especially on those hot summer days!

Ingredients

1 pound of pasta

1/4 pound prosciutto sliced into small pieces

1 pint cherry tomatoes cut in half

1/2 cup castlevetrano olives cut in half

1/2 cup grated pecorino

1 clove of minced garlic

2 cups of arugula

1/2 cup extra virgin olive oil

1/2 red or white wine vinegar

Direction

Cook your pasta according to package instructions

Add the pasta to a big bowl and then add all of your ingredients. Mix well and allow to come to room temperature before covering and putting in the refrigerator.
