Semolina Pasta Dough

If you buy good quality pasta at the store, it should only contain two ingredients, durum wheat semolina and water. This is the traditional pasta dough you will find all over Southern Italy. This dough is used for shorter pastas like cavatelli, orecchiette or capunti.

Ingredients

500g semolina flour

250g water

1tsp salt

Directions

Put your semolina flour on your counter or wood board. Make a well in the center and pour in the water.

Next add the salt and begin to add the flour from the outside into the center of the well. Keep mixing until everything is well combined and then knead your dough until you have a nice uniform ball.

Let it rest 30 minutes before using.
