Scarcella
La colomba Pomaricana, also known as la scarcella, is an Easter pie that comes from the region of Basilicata — more specifically from the town of Pomarico. This delicious pie is layered with primo sale cheese, sweet dried sausage and hard boiled eggs. The dough is a delicious bread-like consistency that is infused with fennel seeds. All of the flavors and textures come together to create the perfect Easter pie.
Ingredients
Dough:
120g evoo
1 teaspoon of salt
3.5 grams lievito di birra
700g semola di grano duro flour
2 pinches of fennel seeds
as much water as is needed for the dough to come together
Inside:
6/7 hard boiled eggs sliced
300g sweet dried sausage sliced
500g primo sale cheese sliced
Egg wash:
1 egg
1 tablespoon milk
