Roasted Red Pepper Sauce

Don’t get me wrong, I love a good red sauce but I’m always looking for ways to spice up my pasta recipes. This roasted red pepper sauce is next level good. You’ll just have to trust me and try it for yourself!

Ingredients

1 lb pasta of your choice

24oz jar of roasted red pepper or 3 red pepper roasted, peeled, deseeded and sliced

2 tablespoons extra virgin olive oil

2 tablespoons tomato paste

1 teaspoon crushed calabrian chili peppers

2 cloves of garlic

2 tablespoons chopped parsley + more for garnish

1/3 cup grated parmigano + more for garnish

Directions

Put a large pot of salted water on to boil

In another pot, add oil and garlic and allow to cook for 3-4 minutes

Next, add your red roasted pepper, tomato paste, calabrian chili and parsley

Cook on medium high heat for 10 minutes

Add everything to a blender and blend until smooth and creamy

Add the sauce back to the pot and taste for salt, add more if needed

Add the grated parmigano and an optional knob of butter (this will make it creamier)

Throw your pasta into the boiling water and cook according to package instructions

Add the pasta to the sauce pot and mix until well coated in the sauce

Plate and garnish with parsley and parmigano
