Roasted Chicken with Grapes and Rosemary
I’m all about a roast chicken recipe and I love finding ways to take it to the next level. What I love about this dish is that in combines deliciously sweet grapes, red onion and fresh rosemary — AND did I mentioned it’s a one pan meal? What’s not to love!?
Ingredients
4 chicken legs (drumstick and thigh)
2 medium red onions thinly sliced
3 cups of red grapes
6-8 sprigs of fresh rosemary
salt and pepper to taste
pinch of nutmeg
1/4 cup extra-virgin olive oil
Directions
Preheat your oven to 450F
On a sheet pan lined with parchment paper, place your grapes, sliced red onion and half of the rosemary
Sprinkle salt, pepper and olive oil then use your hands to mix it all together
In a bowl, place your chicken legs and add salt, pepper, olive oil and the other half of the rosemary
Rub the chicken with the mixture to coat well and then place it on the baking sheet with the grapes and onion
Lightly sprinkle everything on the baking sheet with some nutmeg (careful not to add too much, you just want a subtle hint)
Bake for 35-40 minutes
