Fig and Raspberry Sheet Pan Pancakes
I’m always looking for ways to use all of the figs we get this time of year and these pancakes are a delicious way to do it. I love making sheet pan pancakes because it’s a quick and easy way to feed a crowd!
Ingredients
3 cups flour
2 tablespoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
2 1/2 cups milk
2 packets of paneangeli vanillina or 1 tbsp vanilla extract
2 large eggs
8 tablespoons unsalted butter
1/2 cup raspberries
5-6 figs sliced
Directions
Preheat the oven to 450F
Add all of your dry ingredients to a large bowl and mix together, then add the wet ingredients and mix until everything is fully combined
Line your baking sheet with parchment paper and spread the mixture evenly into the sheet
Add your raspberries and sliced figs to the top
Bake for 15-20 minutes or until golden brown
