Pasta con le Fave

While I do admit, this dish doesn’t exactly look the most appealing to the eye, it makes up for it in taste. Pasta con le fave is another fantastic dish that gets its roots from “cucina povera.” It’s easy to make, requires few ingredients and is Italian comfort food at its finest.

Ingredients

1 pound of ditalini pasta

6 cups of fresh or frozen fava beans

1 medium sized red onion, diced

1/4 cup olive oil

salt and pepper to taste

Directions

In a large pot, add olive oil and diced red onion. Cook for 5-7 minutes until translucent

Add fava beans and cover with 4 cups of hot water. Add some salt

Cook partially covered for 30 minutes

Bring another pot of water to a boil and cook your pasta

Drain and add it to the fava bean mixture and mix to coat well

Add more salt and some pepper to taste
