One-Pot White Wine Shrimp

You know those nights when you open the fridge and there’s literally nothing in it except eggs, milk, and some random condiments? This recipe was born out of one of those nights. Luckily I had a pound of shrimp in the freezer. This dish is so good people will think you slaved over the stove for hours, when in fact it takes about 15-20 minutes to prep and cook.

Ingredients:

1 pound of clean shrimp

1/2 dry white wine

4 cloves of garlic, minced

1/2 an onion, diced

3 tablespoons evoo

1/2 breadcrumbs

juice from one lemon

1/4 cup fresh chopped parsley

salt and red pepper to taste

Directions:

In a large pot or dutch oven, add oil, garlic and onion. Cook for 2-3 minutes on medium heat

Add shrimp, wine, breadcrumbs, lemon, salt and red pepper. Mix together, cover and cook for 8-10 minutes on low heat.

Toast some bread for dipping and serve immediately.
