Mediterranean Orzo Salad

One of my favorite things to do in the summer time is to make a nice big bowl of pasta salad and pick on it throughout the week. This orzo mediterranean salad is so fresh, light and delicious. The longer it marinates the better it tastes! Its the perfect lunch, dinner or side for your summer barbecue.

Ingredients

1 pound of orzo

5 roma tomatoes, diced

1 green pepper, diced

1 small red onion, diced

1/2 cup kalamata olives, halved

2 cucumbers, diced

2 tablespoon fresh chopped parsley

3 tablespoons fresh chopped dill

1 cup feta cheese or diced mozzarella

juice from 1 lemon

1/3 cup evoo

3-4 tablespoons red wine vinegar

salt and pepper to taste

Directions

Put a pot of salted water on to boil and cook pasta according to package instructions

Chop all of your ingredients and add them to a large bowl

Drain your pasta and add it to the bowl

Next, add your feta or mozzarella cheese, parsley, dill, lemon, oil, red wine vinegar, salt and pepper

Toss to mix everything together and refrigerate for a minimum of one hour
