Artichoke Fritters

I absolutely love artichokes — marinated, stuffed, sautéed, I’ll take em! When I saw this artichoke fritter trend going around, I knew I had to make my own version and I can guarantee you will love them! They didn’t last five minutes on the plate.

Yield: 6 fritters

Ingredients

33oz jar of marinated artichoke hearts

1 cup breadcrumbs

1 cup grated parmigiano

2 eggs

1 teaspoon garlic powder

salt and pepper to taste

1 mozzarella cut into bite sized pieces

Directions

Drain your artichokes from the jar, chop them into small pieces and add them to a big bowl

In small bowl, whisk your eggs and then add them to the chopped artichokes

Next, add your breadcrumbs, grated parmigiano, garlic powder, salt and pepper

Mix everything together until the mixture is firm enough to form patties. If you need more breadcrumbs to get them to bind add a little at a time until you get the right consistency

Add a piece of mozzarella to the center and then add more of the artichoke mixture on top to cover and pat down to shape into a fritter

Heat oil in a frying pan and place your fritters into the pan and cook on both sides until golden brown

Transfer to a paper towel lined dish and serve immediately
