Linguini with Stuffed Calamari
A red sauce with seafood is one of my favorite things ever. The flavor seafood infuses into the sauce is something that can’t be beat. This linguini with stuffed calamari tops the list for me and would make any seafood lovers dreams come true.
Ingredients
1 pound of linguini
1 jar of tomato passata
8 whole calamari
4 cloves of garlic
1 tablespoon olive oil
1 teaspoon crushed Calabrian chili pepper
salt to taste
Filling:
2 cups of plain breadcrumbs
1/4 cup grated parmigiano
3 tablespoons fresh chopped parsley
2 cloves of garlic minced
1 egg
salt and pepper to taste
Directions
Note: Ask for your calamari to be cleaned at the fish market. Otherwise, you will have to remove the ink and cuttlebone before cooking
Wash your calamari thoroughly and pat it dry
In a medium sized bowl, place all of your filling ingredients and mix well
Take each calamari and fill the inside with the stuffing, make sure to push the stuffing down so it fills the end
Secure the end of the calamari with a toothpick so the stuffing doesn’t fall out while cooking
In a sauce pot, heat oil, garlic and Calabrian chili pepper for 5-7 minutes until garlic browns but does not burn
Add your jar of tomato passata and put the flame on low heat
Add your calamari and cook covered for 25-30 minutes
Put a pot of water on to boil and cook your pasta according to package instructions
Make sure you time the pasta with when your calamari with be ready
Remove the calamari from the sauce and place it on a dish
Drain your pasta and add it to the pot of sauce
You can either add your calamari back on top or serve separately
