Linguini with Shrimp, Spinach and Lemon Zest

Linguini with shrimp is one of my favorite quick and easy dishes to make. This rendition with spinach, lemon zest and lemon juice is next level delicious!

Ingredients

1 lb of linguini

1 lb shrimp

2 garlic cloves sliced thin

1/2 tsp red pepper flakes

1/2 teaspoon dried oregano

1/2 cup white wine

juice from 1/2 lemon

2 tbsp lemon zest

2 cups fresh spinach

salt to taste

2 tspn evoo

Directions

FIll a large pot with water and salt it. Put it on high flame until it comes to a boil

In another pot, coat the bottom with extra virign olive oil and then add the sliced garlic, red pepper flakes, and dried oregano

Once the garlic begins to brown, add the shrimp and salt to taste and turn up the flame

Pour the white wine and lemon juice and add the lemon zest

Cover with the lid and let cook for 8-10 minutes (depending on how big your shrimp is)

While the shrimp is cooking, throw your pasta in to cook and cook according to package instructions

Add the spinach to your shrimp for the last minute of cooking and allow it to wilt

Add the pasta to the pot with the shrimp and toss everything to combine

If itโ€™s too dry use some reserved pasta water to add more juice

Serve immediately!
