Lemon Bars
While it’s no secret that I have an obsession with all things lemon, these lemon bars take it to a whole new level. The tang from this homemade lemon curd and the flaky shortbread are a match made in heaven.
Ingredients
Short bread:
1/2 cup melted butter
1/4 cup of sugar
1 cup of all purpose flour
pinch of salt
1/4 vanilla extract
Lemon curd:
1/3 cup of sugar
1/3 cup lemon juice
2 long pieces of lemon peel
2 large eggs
1/4 cup of butter
Directions
In a stand mixer or mixing bowl add your sugar, salt, vanilla, butter and flour. Mix until it forms a nice tacky dough. You don’t want it to be too dry
Transfer the dough to a bread pan and pat it down until you cover the whole pan. This should give you a nice thick crust
Bake it in the oven at 350 F for 25 minutes
In a pot on low heat, combine sugar, lemon juice, lemon zest, eggs and butter
Whisk continuously until it becomes a nice thick curd about 8 - 10 minutes. Remove the lemon peel pieces and discard
Pour the curd on top of your shortbread after it is done baking
Leave it to set on the counter for about an hour and then pop it in the fridge for about a half hour
Cut into triangles or squares and dust with powdered sugar
