Fichi d’India Spritz
If you’ve ever been to Southern Italy in the summer time you’ve probably seen fichi d’india or prickly pears growing everywhere. This deliciously sweet fruit is worth the hassle of having to pick it off of a cactus! This cocktail is the perfect ode to the end of summer.
Ingredients
1 fichi d’india (prickly pear)
1 oz aperol
1 oz prosecco
Directions
Peel the skin off of your fichi d’india and put it in a blender with a splash of water. Blend until it becomes liquid
Next, strain the liquid so you don’t get all of the little pits in your cocktail
Fill a cocktail glass with ice, add 1 oz prosecco, 1 oz aperol and 1 oz of the fichi d’india juice
Garnish with mint
