Apple Pie with Amaretti Cookie Crumble
As much as I love summer, fall is my all time favorite season. This year my husband and I went apple picking and I thought it was the perfect opportunity to experiment with an apple pie, but you know I always have to put an Italian twist on things so I finished this baby off with an Amaretti cookie crumble and boy was she delicious.
Ingredients
1 pie crust (you can use store bought or I use this recipe to make my own: Pie crust
6-7 apples depending on the size preferably golden delicious or granny smith
1 tablespoon lemon juice
1/2 cup sugar
3 tablespoons of all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla extract
Crumble:
10-15 amaretti cookies
1/2 stick of butter
1 cup of flour
1/4 teaspoon cinnamon
Directions
Preheat your oven to 375 F
Peel your apples and slice them thin. Place them in a large bowl and add lemon juice, sugar, flour, cinnamon, nutmeg and vanilla. Mix until all of the apples are coated.
Take a 9 inch pie dish and place your rolled out crust over the top. Gently push it down to secure it into the dish.
Take a fork and make indents around the top of the pie crust to create a design
Pour your apples into the pie crust and bake in the oven for 20 minutes
While the pie is baking place the amaretti cookies, butter, flour and cinnamon in a food processor and pulse until it resembles a crumble
When the 20 minutes are up, pull your pie out of the oven and cover the top of the pie with the crumble
Put it back in the oven and bake for another 25-30 minutes or until the top is golden brown
Serve warm with a scoop of vanilla ice cream!
