Fava Bean Pesto

Spring is in the air and with it comes all of the delicious fruits and vegetables that are now in season. One of my favorites is the fava bean! This delicious pesto comes together super quick and tastes like spring on a plate.

Ingredients

250-300g fresh fava beans (skin peeled off)

2 cups of spinach

2 garlic cloves

1/2 cup almond or nut of your choice

1/3 cup grated parmigiano

1/3 cup extra virgin olive oil

zest from 1 lemon

salt and pepper to taste

Directions

Add fava beans, spinach, garlic, almonds, parmigiano, lemon zest, salt, pepper and olive oil to a food processor and blend until you have a nice creamy pesto. I like my pesto to have a little crunch to it so I donโ€™t mind if itโ€™s not super smooth but you can add more oil and continue to blend until it reaches the consistency you like.

You can use this for chicken, fish, pasta or just spread on some crusty bread!

Note: if using for pasta, add some pasta water to the pesto to thin it out and make more sauce-like.
