White Wine Lemon Shrimp Risotto

Its got lemon, its got wine, its got creamy risotto…what’s not to love? This dish is packed with so much flavor in every bite you won’t be able to stop eating it.

Ingredients

Risotto:

2 cups risotto

1 tablespoon olive oil

1/2 cup white wine

1 teaspoon lemon-thyme

4 cups of water

juice from 1/2 a lemon

salt to taste

Shrimp:

1 pound shrimp

splash of white wine

2 cloves garlic

1 tablespoon olive oil

1/2 teaspoon lemon-thyme

salt to taste

Directions

In a dutch oven or deep pot, add olive oil and risotto. Mix to combine together and cook on medium heat. Add white wine and keep mixing until wine begins to evaporate

Add lemon-thyme, lemon juice and salt

Keep adding water and stirring constantly until the risotto is al dente

In a separate smaller pot, add oil and garlic and cook for 2-4 minutes

Add shrimp, splash of wine, lemon juice, lemon-thyme and salt

Cook on medium heat until shrimp is almost all the way cooked and then shut the flame

When your risotto is al dente add the shrimp and all of its juice and keep mixing until the shrimp is fully cooked

Add some more lemon-thyme on top for garnish and serve immediately
