Stuffed Mushrooms

Stuffed mushrooms are one of those Thanksgiving staples for me and they just make a delicious side dish to compliment any entrée. They’re so simple to make and odds are you have everything for the stuffing on hand already!

Ingredients

1 package of whole white mushrooms

1 cup plain breadcrumbs

3 cloves of garlic, minced

2 tablespoon fresh parsley, chopped

2 tablespoons grated parmigiano

mushroom stems, diced

salt and pepper to taste

2-3 tablespoons olive oil

Directions

Preheat the oven to 400 F

Take a damp paper towel and wipe all of your mushrooms clean

Next, gently remove the stems and put them to the side

Line your mushrooms in a baking dish and drizzle olive oil and some salt on them

Take your mushroom stems and trim the ends and discard, chop the rest of the stem into small pieces

In a bowl, add your breadcrumbs, parmigiano, parley, garlic, mushroom stems, salt and pepper

Add 2-3 tablespoons of olive oil to the mixture to bind it

Spoon the mixture into each mushroom

Tip: Add a little water to the bottom of the mushrooms so they do not burn while baking!

Bake for 20-22 minutes or until the mushroom is tender and the top is golden brown
