Spaghetti Pie
This was one of my favorite things to eat growing up. A nice big slice of spaghetti pie made everything seem right in the world. This is the perfect dish to make to store in the fridge to pick on throughout the week!
Ingredients
1 pound spaghetti
1/4 pound of Calabrese hot soppressata diced
2 tablespoons parsley
5 eggs
1/2 cup grated parmigiana
salt and pepper to taste
1/2 cup olive oil
Directions
Cook your spaghetti for half of the time on the box
Strain and let it cool off or it will cook the egg as soon as it touches it
In a bowl, whisk your eggs and add parsley, parmigiano, soppressata, salt and pepper
Take your cooled spaghetti and put it in a large bowl
Add the egg mixture to the bowl
Mix it all around so everything gets coated in the egg mixture
Add oil to your pan and allow it to heat up
Add everything to your pan and cook on medium heat until it is golden brown
Next, you are going to flip the spaghetti pie so it can get golden brown on the other side
When the spaghetti pie is finish place in on a large plate covered with paper towel so you can soak up the excess oi
Gently press down on the top of the pie to soak up the rest of the oil

Note: You can add anything to this pie. Ex: tuna, olives, capers, etc.
You can also bake it at 375 for 25-30 minutes if you do not want to fry it on the stove.
